Soup's On!

After mostly eating out for over a month, with few exceptional highlights and a sad sad dearth of vegetables, I'm tonight having one of the most delicious meals I've had in a long while:  home-made veggie soup!  Crazy, I know!  But OMG, it is SO good!

Chop and saute in olive oil:  2 stalks leeks (white &  green parts), 2 stalks celery (which they actually sold in a plastic-wrapped package of just 2 stalks), 2 carrots, 1/4 squash of some kind (also sold as just 1/4, wrapped in plastic), 2 medium potatoes, 1 zucchini.  Let it go for a while, as you decide if you want to go for more of a veggie stew or actual soup.  Just when you think it may be too late, decide on soup, pour in a tea-kettle worth of boiled water and a dissolved veggie boullion cube, add a bunch of quartered button mushrooms and lots of parsley, some salt and pepper.  Let it boil happily for a while.

Ladle into the only actual bowl you have in the house - which you had to buy yourself, cos the dishes they provide in your serviced apartment are kind of silly.

Enjoy one of the best meals to date in Malaysia.  :)
